When Dude Sweet Chocolate first started we had a great supporter in Royal Pepper Company (a producer from Cambodia of pepper, salt and palm sugar). Since meeting them Katherine will only use Kampot pepper from this company as it is the freshest and the most complex for her tastes as well as being slightly floral. This is a 65% (being not too sweet and not too dark and smoky) cracked Kampot pepper and roughly chopped cocoa nibs (cocoa beans). This is a spice not a heat with a definite crunch.
